My pairing over wifi issue seemed to be related to my home network. I decided to set the camera up in my router with a static IP address. For whatever reason, I am now able to turn on the camera wifi and then start the EOS Utility and the pairing is almost instantaneous. Hopefully this will help others with this issue. Have a nice day!

Set your camera shutter speed between 1/500s to 1/2000s. The swift your subject moves, the faster your shutter speed should be. For example, to capture a particular swimmer’s distinct move, the low shutter speed would be sufficient. But. In the case of a football match, the same shutter speed won’t work fine.
Bluetooth is a very low-power point-to-point radio. It hardly uses any battery power. But it's low bandwidth means it really isn't suitable for remove live-view. I don't use it. I think you technically *can* transfer images via Bluetooth, but it would be slow. Most bluetooth specs also severely
The camera cannot be connected via Wi-Fi if there is no card in the camera (except for [ ] ). The Wi-Fi connection will be terminated if you set the camera’s power to < OFF >, or open the card slot/battery compartment cover. With a Wi-Fi connection established, the camera’s auto power off does not function.
