Honestly, in the case of the OP here, I'd just sell the custom diff to a racer for a good chunk of change, buy a 3.23 LSD from a 96-99 M3, and turn a profit while getting the RPMs down to a good level and saving yourself a boatload of work since the diff is much easier to swap out than the trans.
They're 30 year old cars now, eventually something will break. So if that means going with a 316i/318i cause their cheaper rather than a 318is then so be it. Using an E36 in the snow can be done, but it will be painful. Traction control helps alot and winter tires are a must. Tips: Annual rustproofing is a must if you intend on doing this and keeping your car for a while yet. Get good winter tires on their own set of rims; it can be pricey for a set, but its a night and day difference in car control.
